The Automation Components Inc (ACI) 122580 Thermistor is a part that works like a resistor but is most sensitive to temperature fluctuations in HVAC systems. It has a 20K resistance and has output signals of 0-5/0-10 VDC or 4-20mA, easily interfaced with different control systems.
